We bet that one of the things you miss the most since you are vegan is enjoying good cheese. For this reason we have decided to give you this wonderful recipe with which you will once again enjoy the taste of melted cheese.

It is a very versatile vegan cheese, since you can use it for your toasts and sandwiches, to add to foods such as pasta, steamed potatoes (or fried if you want to treat yourself), to make a cheese fondue, for dips or for any use that you imagine since it is a cheese that melts and toasts.

Ingredients

  • 1 cup oatmeal
  • Water (to cover oats)
  • 2 cups of water
  • 1 teaspoon of Himalayan salt
  • 2 tablespoons of lemon juice
  • 1 tablespoon of apple cider vinegar
  • 3 tablespoons olive oil
  • 5 tablespoons nutritional yeast
  • 2 tablespoons tapioca starch
  • 1/4 cup cold water (to mix with starch)

Optional: to give it a special touch, you can add a little oregano.

Preparation

Time required:  30 minutes.

  1. Put the oats in a bowl and cover with boiling filtered water. Let stand 10 minutes

  2. Put into your mixer or kitchen robot after that time

  3. Add 2 cups of filtered water

  4. Blend 1 minute

  5. Pour into your nut milk bag (cloth bag to filter and prepare vegetable drinks)

  6. Extract all the liquid by pressing. You can also put into a strainer to prevent any piece from leaking

  7. Add the salt, lemon, vinegar, oil and nutritional yeast. Stir and start cooking over medium heat

    Meanwhile, prepare the next step

  8. In a separate bowl, mix the tapioca starch with ¼ cup of cold water

  9. Mix in the saucepan with the previous mixture and cook for 5 minutes while stirring

  10. When it’s creamy and textured with melted cheese, set aside and enjoy in your favourite dishes
